- 1 cup diced tomatoes

Instructions
- Blend soaked cashews until smooth to create cashew cream.
- Layer blended avocados on the bottom of a serving dish.
- Spread cashew cheese over the avocados.
- Mix black beans with taco seasoning and layer over the cheese.
- Add diced tomatoes and corn on top.
- Garnish with chopped cilantro.
- Serve immediately with tortilla chips and fresh veggies.
