Description

A creamy, flavorful, dairy-free taco dip that’s perfect for any gathering.


Ingredients

Scale
  • 2 ripe avocados
  • 1 cup cashew cheese
  • 1 can black beans, rinsed and drained
  • 1 tablespoon taco seasoning
  • 1 cup diced tomatoes
  • 1/2 cup corn
  • 1/4 cup chopped cilantro
  • Salt to taste
  • Tortilla chips for serving
  • Fresh veggie sticks for serving

Instructions

  1. Blend soaked cashews until smooth to create cashew cream.
  2. Layer blended avocados on the bottom of a serving dish.
  3. Spread cashew cheese over the avocados.
  4. Mix black beans with taco seasoning and layer over the cheese.
  5. Add diced tomatoes and corn on top.
  6. Garnish with chopped cilantro.
  7. Serve immediately with tortilla chips and fresh veggies.

Notes

Soak cashews for at least 4 hours for a smooth texture. Adjust spices to your liking.
