- 1 pound Italian sausage
- 1 onion, diced
- 2 cloves garlic, minced
- 2 carrots, diced
- 2 celery stalks, diced
- 1 can (14.5 oz) diced tomatoes
- 4 cups chicken broth
- 1 teaspoon Italian seasoning
- Salt and pepper to taste
- 1 package (9 oz) fresh tortellini
- Grated Parmesan cheese for serving
- Fresh basil for garnish
Instructions
- In a skillet, sauté the Italian sausage until browned.
- In the crockpot, combine the sausage, onion, garlic, carrots, celery, diced tomatoes, chicken broth, Italian seasoning, salt, and pepper.
- Cover and cook on low for 4-6 hours.
- About 30 minutes before serving, stir in the tortellini.
- Serve hot topped with Parmesan cheese and fresh basil.
