A hands-off, comforting dish featuring tender beef, colorful bell peppers, and a savory sauce, made effortlessly in a slow cooker.
Ingredients

- 1.5–2 lb beef (flank, skirt, or chuck), cut into 1/2-inch strips
- Salt and pepper to taste
- 2 sliced bell peppers
- 1 large onion, sliced
- 3 cloves garlic, smashed
- 1 cup beef broth
- 1/4 cup low-sodium soy sauce
- 2 tbsp Worcestershire sauce
- 1–2 tbsp brown sugar
- 2 tbsp cornstarch (for thickening)
- 2 tbsp cold water (for thickening)
Instructions
- Season the beef strips with salt and pepper.
- Sear the beef in a hot skillet for 1–2 minutes per side until browned, then transfer to the crockpot.
- Add sliced bell peppers, onion, garlic, beef broth, soy sauce, Worcestershire sauce, and brown sugar to the crockpot.
- Cook on LOW for 4–6 hours or HIGH for 2.5–3 hours.
- If you prefer crisper peppers, add them during the last 60–90 minutes of cooking.
- For thickening, whisk together cornstarch and cold water, stir into the crockpot, and cook on HIGH for an additional 10–20 minutes until sauce is thickened.
Notes
Searing the beef first adds depth, and adding peppers later helps maintain their texture.
