This rich and creamy Crockpot Cream Cheese Chicken Chili is a comforting dish perfect for busy weeknights or game-day gatherings, made easy with a slow cooker.

- 1 medium chopped onion
- 2 cloves minced garlic
- 1 (15 oz) can white beans, drained
- 1 (15 oz) can corn, drained
- 1 (10 oz) can diced tomatoes with chiles (or Rotel)
- 1 cup low-sodium chicken broth
- 2 teaspoons cumin
- 1–2 teaspoons chili powder
- Salt and pepper to taste
- 2 pounds boneless skinless chicken breasts or thighs
- 8 ounces cream cheese, softened
Instructions
- Layer the onion, garlic, white beans, corn, diced tomatoes, chicken broth, cumin, chili powder, salt, and pepper in the slow cooker.
- Add the chicken on top of the ingredients.
- Cook on Low for 6–8 hours or on High for 3–4 hours until the chicken reaches 165°F and is very tender.
- Remove the chicken, shred it, and stir it back into the pot with the softened cream cheese until smooth.
- Taste and adjust salt, adding lime juice for brightness if desired.
Notes
For a different creamy comfort dish, you can substitute chicken with sweet potatoes for a vegetarian option or add spices if you prefer more heat.
