Ingredients

  • 46 bone-in chicken pieces (thighs or drumsticks)
  • Salt and pepper to taste
  • 1 onion, diced
  • 23 cloves garlic, minced
  • 12 cups chicken or vegetable broth
  • 1 tablespoon fresh thyme or rosemary
  • 1 tablespoon lemon juice

Instructions

  1. Season chicken pieces with salt and pepper and sear them in a skillet (optional).
  2. Place the chicken in the crockpot with diced onions, garlic, and broth.
  3. Add herbs and lemon juice.
  4. Set the crockpot to low for 6-8 hours or high for 4-5 hours.
  5. Once cooked, shred the chicken and let it soak in the juices before serving.

Notes

Store leftovers in an airtight container in the fridge for up to 3-4 days. Freeze shredded chicken for up to 3 months.
