- 4–6 bone-in chicken pieces (thighs or drumsticks)
- Salt and pepper to taste
- 1 onion, diced
- 2–3 cloves garlic, minced
- 1–2 cups chicken or vegetable broth
- 1 tablespoon fresh thyme or rosemary
- 1 tablespoon lemon juice
Instructions
- Season chicken pieces with salt and pepper and sear them in a skillet (optional).
- Place the chicken in the crockpot with diced onions, garlic, and broth.
- Add herbs and lemon juice.
- Set the crockpot to low for 6-8 hours or high for 4-5 hours.
- Once cooked, shred the chicken and let it soak in the juices before serving.
Notes
Store leftovers in an airtight container in the fridge for up to 3-4 days. Freeze shredded chicken for up to 3 months.
