Description

A hearty and flavorful Mediterranean chicken dish prepared in a slow cooker with feta and fresh spinach.


Ingredients

Scale
  • 4 boneless, skinless chicken thighs
  • 2 tablespoons olive oil
  • 2 cloves garlic, minced
  • 1 teaspoon dried oregano
  • Juice of 1 lemon
  • 1 can diced tomatoes (14 oz)
  • 2 cups fresh spinach
  • 1 onion, diced
  • Salt and pepper to taste
  • Feta cheese for serving
  • Fresh parsley or basil for garnish

Instructions

  1. Season the chicken with olive oil, garlic, oregano, lemon juice, salt, and pepper.
  2. Place the seasoned chicken in the slow cooker.
  3. Add the diced tomatoes, spinach, and onion on top of the chicken.
  4. Cook on low for 6-8 hours or on high for 4 hours until chicken is tender.
  5. Shred the chicken before serving, and top with feta cheese and fresh herbs.

Notes

Serve over couscous or quinoa for a complete meal. This dish can also be made dairy-free by omitting feta or using a dairy-free alternative.
