A hearty and flavorful Mediterranean chicken dish prepared in a slow cooker with feta and fresh spinach.
Ingredients

- 4 boneless, skinless chicken thighs
- 2 tablespoons olive oil
- 2 cloves garlic, minced
- 1 teaspoon dried oregano
- Juice of 1 lemon
- 1 can diced tomatoes (14 oz)
- 2 cups fresh spinach
- 1 onion, diced
- Salt and pepper to taste
- Feta cheese for serving
- Fresh parsley or basil for garnish
Instructions
- Season the chicken with olive oil, garlic, oregano, lemon juice, salt, and pepper.
- Place the seasoned chicken in the slow cooker.
- Add the diced tomatoes, spinach, and onion on top of the chicken.
- Cook on low for 6-8 hours or on high for 4 hours until chicken is tender.
- Shred the chicken before serving, and top with feta cheese and fresh herbs.
Notes
Serve over couscous or quinoa for a complete meal. This dish can also be made dairy-free by omitting feta or using a dairy-free alternative.
