Description

Crispy Zucchini Garlic Bites are a delicious and healthy snack that are perfect for parties, game days, or as a tasty appetizer.

Ingredients

Scale
  • 2 medium zucchinis, grated
  • 1/2 cup breadcrumbs (regular or gluten-free)
  • 1/4 cup grated Parmesan cheese (optional for dairy-free)
  • 2 cloves garlic, minced
  • 1 large egg
  • 1 tbsp fresh parsley, chopped
  • Salt and pepper, to taste
  • Olive oil spray or drizzle for baking

Instructions

  1. Grate the zucchinis and place them in a clean kitchen towel to squeeze out excess moisture.
  2. In a bowl, combine the grated zucchini, breadcrumbs, Parmesan cheese, minced garlic, chopped parsley, egg, salt, and pepper. Stir until everything is fully combined.
  3. Shape the mixture into small patties or bite-sized balls.
  4. Preheat your oven to 400°F (200°C). Place the zucchini bites on a lined baking sheet and lightly spray with olive oil.
  5. Bake for 15-20 minutes, flipping halfway through, until they are golden and crispy.
  6. Let the bites cool slightly before serving.

Notes

Pair with your favorite dipping sauce like ranch or marinara. You can store leftovers in an airtight container in the fridge for 3-4 days.
