Instructions
- Grate the zucchinis and place them in a clean kitchen towel to squeeze out excess moisture.
- In a bowl, combine the grated zucchini, breadcrumbs, Parmesan cheese, minced garlic, chopped parsley, egg, salt, and pepper. Stir until everything is fully combined.
- Shape the mixture into small patties or bite-sized balls.
- Preheat your oven to 400°F (200°C). Place the zucchini bites on a lined baking sheet and lightly spray with olive oil.
- Bake for 15-20 minutes, flipping halfway through, until they are golden and crispy.
