- 2 medium sweet potatoes, peeled and diced
- 1 cup red lentils, rinsed
- 1 cup breadcrumbs
- 1 teaspoon salt
- 1/2 teaspoon black pepper
- 1 teaspoon paprika
- 1 tablespoon olive oil (for cooking)
Instructions
- Cook red lentils in boiling water until tender, about 15 minutes. Drain and set aside.
- In a separate pot, boil sweet potatoes until soft. Drain and mash until smooth.
- Combine the mashed sweet potatoes, cooked lentils, breadcrumbs, salt, pepper, and paprika in a bowl.
- Form the mixture into patties.
- Heat olive oil in a non-stick skillet over medium heat. Fry each patty until golden and crispy on both sides, about 4-5 minutes per side.
Notes
Let patties rest for 10 minutes before frying. Use gluten-free breadcrumbs for a gluten-free option.
