Ingredients

- 2 cups diced ripe peaches
- 2 tablespoons granulated sugar
- 1 tablespoon brown sugar
- 1 tablespoon cornstarch
- 1/2 teaspoon ground cinnamon
- 1 teaspoon lemon juice
- 1 tablespoon butter
- Egg roll wrappers
- Beaten egg (for sealing)
- 2 inches of oil (for frying)
- Cinnamon sugar (for dusting)
- 1/2 cup powdered sugar (for glaze)
- 1–2 teaspoons milk (for glaze)
Instructions
- Sauté the diced peaches with granulated sugar, brown sugar, cornstarch, ground cinnamon, lemon juice, and butter over medium heat until thickened (about 4–6 minutes).
- Cool the filling to room temperature (or chill for 10–15 minutes).
- Place about 2 tablespoons of filling on each egg roll wrapper and brush edges with beaten egg.
- Fold and roll the wrappers tightly.
- Fry in 2 inches of oil at 350°F for 2–3 minutes per side until golden, or bake at 400°F for 12–15 minutes, flipping halfway, or air-fry at 375°F for 8–10 minutes.
- Dust with cinnamon sugar or drizzle with vanilla glaze before serving.
Notes
Serve warm with vanilla ice cream and caramel sauce for a delightful treat.
