Description

An elegant weeknight dinner featuring moist salmon topped with a crunchy Parmesan crust.


Ingredients

Scale
  • 4 skin-on salmon fillets (6 oz each)
  • 1/2 teaspoon salt
  • 1/4 teaspoon black pepper
  • 1/2 cup finely grated Parmesan cheese
  • 1/2 cup panko breadcrumbs
  • 1 teaspoon garlic powder
  • 1 tablespoon chopped fresh parsley
  • 1 tablespoon olive oil (plus 1 tablespoon for searing)

Instructions

  1. Pat the salmon fillets dry and season them with salt and pepper.
  2. In a bowl, mix Parmesan, panko, garlic powder, parsley, and olive oil until combined.
  3. Press the mixture onto the flesh side of the fillets.
  4. Heat 1 tablespoon oil in an oven-safe skillet over medium-high heat and sear the salmon skin-side down for 2–3 minutes.
  5. Transfer the skillet to a preheated oven at 425°F and bake for 8–10 minutes.
  6. If needed, broil for 1–2 minutes for a crispy finish.

Notes

Pat salmon dry for a better crust. Optional: brush with Dijon mustard for better adhesion.
