Ingredients

  • 8 thick slices (3/4-inch) day-old brioche or challah
  • 3 large eggs
  • 1 cup whole milk
  • 1/3 cup heavy cream (optional)
  • 1 tbsp granulated sugar
  • 1 tsp vanilla extract
  • 1/2 tsp ground cinnamon
  • A pinch of salt
  • Melted butter or neutral oil (for greasing the waffle iron)

Instructions

  1. Whisk together eggs, milk, heavy cream (if using), sugar, vanilla, cinnamon, and salt in a bowl.
  2. Dip each slice of bread into the custard for 10–15 seconds per side for lightly soaked, or 30 seconds for a custardier interior, shaking off the excess.
  3. Preheat your waffle iron to medium-high and brush with melted butter or coat with oil.
  4. Cook each slice in the waffle iron for 3–5 minutes until deep golden and crisp.
  5. Keep cooked waffles warm on a wire rack in a 200°F oven while finishing the batch.

Notes

Use day-old, firm bread for best results. If making multiple waffles, finish them in the oven to maintain crispness.
