- 1 lb fresh lump crab meat
- 1 cup diced bell peppers
- 1/2 cup chopped green onions
- 2 cloves garlic, minced
- 1 tablespoon Dijon mustard
- 2 teaspoons Old Bay seasoning
- 12 egg roll wrappers
- 1 egg (mixed with a splash of water for sealing)
- Salt and pepper to taste
Instructions
- Preheat the oven to 375°F (190°C) if baking.
- In a bowl, combine crab meat, bell peppers, green onions, garlic, mustard, Old Bay seasoning, salt, and pepper.
- Place about two tablespoons of the mixture in the center of each egg roll wrapper.
- Roll the wrapper tightly, sealing the edges with egg wash.
- Arrange the rolls on a baking sheet; brush lightly with oil if baking.
- Bake for 20 minutes or until golden brown, or fry in hot oil until crispy.
- Serve warm with your favorite dipping sauce.
Notes
For a gluten-free version, use gluten-free egg roll wrappers. You can also customize the filling for a vegetarian option or a spicy twist by adding jalapeños.
