- 1/2 cup all-purpose flour
- 2 large eggs
- 1–2 tbsp milk
- 1 cup panko breadcrumbs
- 1/2 cup grated Parmesan cheese
- 1/2 tsp garlic powder
- 1/4 tsp smoked paprika
- Salt and pepper to taste
- Neutral oil spray (like avocado or canola) for crisping
Instructions
- Pat mushrooms dry and set up a dredging station with flour, beaten eggs, and panko mixture.
- Coat each mushroom in flour, then egg, then panko, pressing gently so crumbs adhere.
- Preheat air fryer to 400°F (200°C).
- Arrange mushrooms in a single layer without crowding, spray lightly with oil.
- Air-fry for 8–10 minutes, flipping once halfway through, until deeply golden and cooked through.
Notes
For best texture, chill breaded mushrooms for 10 minutes before cooking. Serve with dipping sauces like garlic aioli or sriracha mayo.
