Ingredients

- 2 cups full-fat Greek yogurt
- 2 tablespoons honey (or maple syrup)
- 1 teaspoon vanilla extract
- A pinch of fine salt
- 1–2 tablespoons cold heavy cream or mascarpone (optional)
Instructions
- Chill a metal bowl and beaters for 10–15 minutes.
- In the chilled bowl, whip the Greek yogurt on medium-high for 2–3 minutes until light and airy.
- Fold in sweetener, vanilla extract, salt, and optional cold cream or mascarpone gently.
- Spoon into serving dishes and add toppings as desired.
Notes
For best results, use full-fat or 2% Greek yogurt. To stabilize, whisk in gelatin if desired. Store in an airtight container for up to 3-4 days.
