Description

Warm up with a bowl of creamy spinach soup that combines tender spinach with rich Gruyere cheese for a delicious twist on a classic soup.

Ingredients

Scale
  • 1 tablespoon olive oil
  • 1 onion, chopped
  • 2 cloves garlic, minced
  • 4 cups fresh spinach
  • 4 cups vegetable broth
  • 1/2 teaspoon nutmeg
  • Salt and pepper to taste
  • 1 cup Gruyere cheese, shredded

Instructions

  1. Heat olive oil in a pot over medium heat. Add chopped onion and minced garlic, and sauté until fragrant and tender.
  2. Add fresh spinach, vegetable broth, and nutmeg. Season with salt and pepper. Bring to a simmer and cook for about 10 minutes.
  3. Blend the mixture until smooth, using an immersion blender or a countertop blender.
  4. Return the soup to the pot and stir in the melted Gruyere cheese until well combined.
  5. Serve hot, with optional toppings like toasted pine nuts or croutons.

Notes

For thicker soup, reduce the amount of broth. Use fresh spinach for best flavor. A pinch of nutmeg can enhance the dish significantly.
