Instructions
- Heat olive oil in a pot over medium heat. Add chopped onion and minced garlic, and sauté until fragrant and tender.

- Blend the mixture until smooth, using an immersion blender or a countertop blender.

Notes
For thicker soup, reduce the amount of broth. Use fresh spinach for best flavor. A pinch of nutmeg can enhance the dish significantly.
