- 1 cup rice (parboiled or long-grain)
- 1 onion (diced)
- 3 cloves garlic (minced)
- 2 cups chicken broth (preferably homemade)
- 1 cup heavy cream
- Salt and pepper to taste
- Fresh parsley or chives (for garnish)
- Optional: vegetables (zucchini, bell peppers, mushrooms)
Instructions
- Preheat the oven to 350°F (175°C).
- Sauté onions and garlic in a large skillet until fragrant.
- Combine sautéed mixture with rice, chicken, and chicken broth in a casserole dish.
- Pour heavy cream over the mixture and season with salt and pepper.
- Cover with foil and bake for 45 minutes.
- Remove foil and bake for an additional 10 minutes or until the chicken reaches 165°F (74°C).
- Let it rest for 10 minutes before serving.
- Garnish with freshly chopped parsley or chives.
