Description

Ingredients

  • 1 lb chicken (bone-in, skin-on)
  • 1 cup rice (parboiled or long-grain)
  • 1 onion (diced)
  • 3 cloves garlic (minced)
  • 2 cups chicken broth (preferably homemade)
  • 1 cup heavy cream
  • Salt and pepper to taste
  • Fresh parsley or chives (for garnish)
  • Optional: vegetables (zucchini, bell peppers, mushrooms)

Instructions

  1. Preheat the oven to 350°F (175°C).
  2. Sauté onions and garlic in a large skillet until fragrant.
  3. Combine sautéed mixture with rice, chicken, and chicken broth in a casserole dish.
  4. Pour heavy cream over the mixture and season with salt and pepper.
  5. Cover with foil and bake for 45 minutes.
  6. Remove foil and bake for an additional 10 minutes or until the chicken reaches 165°F (74°C).
  7. Let it rest for 10 minutes before serving.
  8. Garnish with freshly chopped parsley or chives.

Notes
