- 1 small onion, chopped
- 4 cups potatoes, peeled and sliced thin
- 1 pound kielbasa or smoked sausage, cut into rounds
- 1 1/2 cups shredded cheddar cheese, split
- 1 can (10.5 ounces) cream of mushroom or cream of chicken soup
- 3/4 cup sour cream
- Black pepper to taste
- Salt to taste
- Chopped parsley for garnish (optional)
Instructions
- Preheat your oven to 375°F and lightly grease a 9×13 baking pan.
- In a large bowl, toss together the sausage coins, potato slices, and chopped onion until well coated.
- In another bowl, mix the cream of soup, sour cream, and half of the cheddar cheese. Season with salt and pepper to taste.
- Spoon the sausage and potato mixture into the prepared baking pan, spreading evenly.
- Pour the creamy mixture over the sausage and potatoes, ensuring everything is covered.
- Sprinkle the remaining cheddar cheese on top.
- Cover the dish with foil and bake for 30 minutes. Remove the foil and bake for an additional 10 to 15 minutes until bubbly and the potatoes are soft.
- Let it cool for about five minutes, then garnish with parsley if desired and serve hot.
Notes
For extra flavor, consider adding garlic powder or your favorite seasoning. Can be made vegetarian by swapping sausage for plant-based alternatives.
