- 1 cup all-purpose flour
- 2 tablespoons butter
- 2 tablespoons olive oil
- Salt, pepper, and garlic powder for seasoning
- 2 tablespoons minced garlic
- 2 tablespoons all-purpose flour (for gravy)
- 1 cup chicken broth
- 1 cup heavy whipping cream
- ½ teaspoon salt (for gravy)
- ½ teaspoon black pepper (for gravy)
- 1 teaspoon garlic powder (for gravy)
- 1 teaspoon smoked paprika
- 1 teaspoon onion powder
Instructions
- Butterfly cut the chicken breasts and season generously with salt, pepper, and garlic powder.
- In a shallow dish, combine 1 cup of flour with additional salt, pepper, and garlic powder.
- Dredge each piece of chicken in the seasoned flour mixture, coating both sides well.
- Heat butter and olive oil in a skillet over medium heat. Fry chicken for 5-7 minutes per side until golden brown and internal temperature reaches 165°F.
- Remove cooked chicken from the skillet and set aside.
- In the same skillet, add minced garlic and 2 tablespoons of flour and stir continuously for about 1 minute.
- Gradually whisk in chicken broth and then heavy cream, stirring constantly to prevent lumps.
- Add salt, pepper, garlic powder, smoked paprika, and onion powder to the gravy, stirring until smooth and creamy (about 2-3 minutes).
- Return chicken to the skillet or pour gravy over chicken and serve immediately over mashed potatoes or rice.
Notes
For extra crispiness, double-dip the chicken in the flour mixture. Use skinless chicken breasts for a healthier option.
