- 8 oz fettuccine pasta
- 2 cups sliced cremini and shiitake mushrooms
- 2 cups fresh spinach
- 2 tablespoons olive oil
- 2 cloves garlic, minced
- 1 cup heavy cream
- Salt and pepper to taste
- Freshly grated Parmesan for garnish
Instructions
- Cook the fettuccine pasta in boiling water until al dente. Drain and reserve a cup of pasta water.
- In a large skillet, heat olive oil over medium heat. Sauté the sliced mushrooms until golden brown and fragrant.
- Add minced garlic and cook for an additional minute.
- Stir in the fresh spinach and cook until wilted.
- Pour in the heavy cream, and season with salt and pepper. Mix well.
- Combine the cooked pasta with the mushroom-spinach sauce. Adjust the consistency with reserved pasta water if needed.
- Serve in bowls, garnished with freshly grated Parmesan and black pepper.
Notes
Use a mix of mushrooms for varied textures and flavors. For a lighter version, replace heavy cream with Greek yogurt.
