Ingredients

  • 8 oz fettuccine pasta
  • 2 cups sliced cremini and shiitake mushrooms
  • 2 cups fresh spinach
  • 2 tablespoons olive oil
  • 2 cloves garlic, minced
  • 1 cup heavy cream
  • Salt and pepper to taste
  • Freshly grated Parmesan for garnish

Instructions

  1. Cook the fettuccine pasta in boiling water until al dente. Drain and reserve a cup of pasta water.
  2. In a large skillet, heat olive oil over medium heat. Sauté the sliced mushrooms until golden brown and fragrant.
  3. Add minced garlic and cook for an additional minute.
  4. Stir in the fresh spinach and cook until wilted.
  5. Pour in the heavy cream, and season with salt and pepper. Mix well.
  6. Combine the cooked pasta with the mushroom-spinach sauce. Adjust the consistency with reserved pasta water if needed.
  7. Serve in bowls, garnished with freshly grated Parmesan and black pepper.

Notes

Use a mix of mushrooms for varied textures and flavors. For a lighter version, replace heavy cream with Greek yogurt.
