- 8 oz elbow macaroni
- 2 tbsp butter
- 2 tbsp all-purpose flour
- 2 cups milk
- 1 cup sharp cheddar cheese, shredded
- 1 cup mozzarella cheese, shredded
- Salt, to taste
- Pepper, to taste
- Optional: Mustard powder, to taste
- Optional: Bread crumbs, for topping
Instructions
- Boil the elbow macaroni in salted water until just al dente. Drain and set aside.
- In a heavy-bottomed pot, melt the butter over medium heat. Whisk in the flour to create a roux.
- Gradually whisk in the milk, continuing to whisk until the mixture thickens.
- Remove from heat and stir in the sharp cheddar and mozzarella until melted and smooth.
- Combine the cheese sauce with the pasta, stirring to coat evenly.
- Serve immediately or transfer to a baking dish, top with bread crumbs, and bake at 350°F (175°C) until bubbly and golden.
