Ingredients

  • 4 bone-in chicken thighs (skin-on)
  • 2 fresh lemons (juiced and zested)
  • 1 cup heavy cream
  • 4 garlic cloves (minced)
  • 1 cup low-sodium chicken broth
  • 1 tsp dried thyme
  • Salt and pepper to taste
  • 2 tbsp butter

Instructions

  1. Preheat the oven to 400°F (200°C). Season chicken thighs generously with salt and pepper.
  2. In an oven-safe skillet over medium-high heat, melt the butter. Sear chicken thighs skin-side down for 5-7 minutes until golden brown; flip and sear for an additional few minutes before removing from heat.
  3. In the same skillet, sauté minced garlic until fragrant. Add chicken broth, scraping up any flavorful bits from the pan.
  4. Stir in lemon juice, heavy cream, and dried thyme. Simmer for about 2 minutes until slightly thickened.
  5. Return chicken to the skillet, skin-side up. Spoon sauce over them and bake for 25-30 minutes until cooked through.
  6. Serve with remaining sauce drizzled on top.

Notes

For extra flavor, marinate the chicken thighs in lemon juice and garlic for a few hours before cooking. Ensure the chicken is dry before searing for better crispy skin. Adjust the amount of lemon juice based on your preference for tartness.
