- 4 bone-in chicken thighs (skin-on)
- 2 fresh lemons (juiced and zested)
- 1 cup heavy cream
- 4 garlic cloves (minced)
- 1 cup low-sodium chicken broth
- 1 tsp dried thyme
- Salt and pepper to taste
- 2 tbsp butter
Instructions
- Preheat the oven to 400°F (200°C). Season chicken thighs generously with salt and pepper.
- In an oven-safe skillet over medium-high heat, melt the butter. Sear chicken thighs skin-side down for 5-7 minutes until golden brown; flip and sear for an additional few minutes before removing from heat.
- In the same skillet, sauté minced garlic until fragrant. Add chicken broth, scraping up any flavorful bits from the pan.
- Stir in lemon juice, heavy cream, and dried thyme. Simmer for about 2 minutes until slightly thickened.
- Return chicken to the skillet, skin-side up. Spoon sauce over them and bake for 25-30 minutes until cooked through.
- Serve with remaining sauce drizzled on top.
Notes
For extra flavor, marinate the chicken thighs in lemon juice and garlic for a few hours before cooking. Ensure the chicken is dry before searing for better crispy skin. Adjust the amount of lemon juice based on your preference for tartness.
