- 12 ounces Spaghetti or your choice of pasta
- 2 medium ripe avocados
- 1 cup fresh basil leaves
- 2–3 cloves garlic
- 1 medium lemon (juiced)
- ½ cup extra-virgin olive oil
- to taste salt and pepper
- ¼ cup grated Parmesan cheese (optional)
Instructions
- Bring a large pot of salted water to a boil and cook pasta according to package instructions until al dente, about 8-10 minutes.
- While pasta is cooking, prepare avocado pesto by cutting avocados in half, removing the pit, and scooping the flesh into a food processor.
- Add fresh basil leaves to the food processor and pulse until roughly chopped.
- Peel garlic cloves and add them to the food processor. Pulse until well incorporated.
- Squeeze in lemon juice and pulse to combine.
- With the processor running, slowly drizzle in olive oil until desired consistency is reached.
- Season pesto with salt and pepper to taste and pulse to mix.
- Once pasta is cooked, reserve about a cup of cooking water, then drain pasta.
- In the same pot, return drained pasta, add avocado pesto and toss to coat, adding reserved water as needed.
- Serve immediately, garnished with fresh basil or a sprinkle of Parmesan cheese.
Notes
For best flavor, ensure avocados are ripe. Adjust garlic and lemon juice to taste.
