Instructions
- In a large pot, sauté the diced onions and minced garlic in olive oil until fragrant and golden.
- Add the diced potatoes, vegetable broth, and seasonings; let simmer until the potatoes are tender.
- Blend part of the soup to achieve a creamy consistency while keeping some texture.
- Stir in the cheddar cheese and fresh herbs just before serving.
- Serve in warm bowls topped with additional cheddar, chives, and a drizzle of olive oil.
