Description

Ingredients

  • 1 large onion, diced
  • 3 cloves garlic, minced
  • 4 medium Russet or Yukon Gold potatoes, diced
  • 4 cups vegetable broth
  • 1 cup sharp cheddar cheese, shredded
  • Fresh herbs (chives, parsley, etc.) for garnish
  • Salt and pepper to taste

Instructions

  1. In a large pot, sauté the diced onions and minced garlic in olive oil until fragrant and golden.
  2. Add the diced potatoes, vegetable broth, and seasonings; let simmer until the potatoes are tender.
  3. Blend part of the soup to achieve a creamy consistency while keeping some texture.
  4. Stir in the cheddar cheese and fresh herbs just before serving.
