- 12 oz rotini pasta
- 1 cup chicken broth
- 1 1/2 cups heavy cream
- 1 cup grated Parmesan cheese
- 2 tbsp butter
- 2 tbsp olive oil
- 2 chicken breasts (boneless, skinless, cut into strips or cubes)
- 4 cloves garlic, minced
- Salt and pepper, to taste
- Fresh parsley, chopped (optional, for garnish)
Instructions
- In a large pot, bring salted water to a boil and cook the rotini pasta according to the package instructions, typically 8-10 minutes. Drain and set aside.
- In a large skillet, heat the olive oil and butter over medium-high heat. Season the chicken pieces with salt and pepper.
- Add the chicken to the skillet and cook until golden brown on all sides and fully cooked through (about 7-8 minutes). Remove the chicken from the skillet and set aside.
- In the same skillet, add the minced garlic and sauté for 1-2 minutes, until fragrant.
- Pour in the chicken broth and let it simmer for 2-3 minutes, scraping up any browned bits from the bottom of the skillet.
- Stir in the heavy cream and bring it to a gentle simmer. Let it cook for 2-3 minutes until it thickens slightly.
- Gradually add the grated Parmesan cheese, stirring constantly, until the cheese is fully melted and the sauce is smooth.
- Add the cooked rotini pasta to the skillet and toss to coat it in the creamy Parmesan sauce.
- Add the cooked chicken back into the skillet, tossing everything together to combine.
- Once everything is well combined and heated through, serve the creamy garlic butter chicken and rotini immediately. Garnish with fresh chopped parsley if desired.

Serve hot for the best flavor and texture. Pairs well with a fresh green salad or warm garlic bread. To store leftovers, cool completely and refrigerate for up to 3 days.
