Description

A hearty, rich soup that combines flavorful spices and nutritious veggies, perfect for chilly nights and gatherings.


Ingredients

  • 1 tablespoon olive oil
  • 1 onion, diced
  • 2 cloves garlic, minced
  • 1 bell pepper, diced
  • 1 pound ground beef (or protein of choice)
  • 1 can diced tomatoes
  • 1 can corn, drained
  • 1 can black beans, drained and rinsed
  • 4 cups beef or vegetable broth
  • 1 cup heavy cream
  • Salt and pepper to taste
  • Fresh cilantro, for garnish
  • Shredded cheese, for garnish (optional)

Instructions

  1. Heat olive oil in a large pot over medium heat. Add onion, garlic, and bell pepper; sauté until fragrant and soft.
  2. Add ground beef and cook until browned. Drain excess fat if necessary.
  3. Stir in diced tomatoes, corn, black beans, broth, and heavy cream.
  4. Bring to a simmer and cook until the soup thickens, stirring occasionally.
  5. Season with salt and pepper to taste, and garnish with fresh cilantro and cheese before serving.

Notes

For a thicker soup, reduce broth or add more cream as needed. Adjust spices to taste for a personalized kick!
