Description

Ingredients

  • 1 tablespoon olive oil
  • 1 onion, chopped
  • 2 cloves garlic, minced
  • 1 pound ground beef or turkey
  • 4 cups low-sodium chicken or vegetable broth
  • 1 cup heavy cream
  • 2 cups mixed vegetables (carrots, peas, corn)
  • 1 teaspoon salt
  • 1/2 teaspoon black pepper
  • 1 teaspoon paprika
  • 1 tablespoon Worcestershire sauce
  • Fresh herbs (parsley or chives) for garnish

Instructions

  1. In a large pot or Dutch oven, heat olive oil over medium heat. Sauté onions and garlic until tender.
  2. Add ground meat to the pot and brown.
  3. Pour in the broth and bring to a simmer.
  4. Stir in the heavy cream and mixed vegetables, cooking until heated through and flavors meld.
  5. Season with salt, pepper, paprika, and Worcestershire sauce.
  6. Serve with fresh herbs and crusty bread.

Notes

For a lighter version, use half-and-half or coconut milk instead of heavy cream. This soup can be frozen for up to 3 months.
