- 1 pound ground beef or turkey
- 4 cups low-sodium chicken or vegetable broth
- 1 cup heavy cream
- 2 cups mixed vegetables (carrots, peas, corn)
- 1 teaspoon salt
- 1/2 teaspoon black pepper
- 1 teaspoon paprika
- 1 tablespoon Worcestershire sauce
- Fresh herbs (parsley or chives) for garnish
Instructions
- In a large pot or Dutch oven, heat olive oil over medium heat. Sauté onions and garlic until tender.
- Add ground meat to the pot and brown.
- Pour in the broth and bring to a simmer.
- Stir in the heavy cream and mixed vegetables, cooking until heated through and flavors meld.
- Season with salt, pepper, paprika, and Worcestershire sauce.
- Serve with fresh herbs and crusty bread.
Notes
For a lighter version, use half-and-half or coconut milk instead of heavy cream. This soup can be frozen for up to 3 months.
