- 2 medium-sized boneless, skinless chicken breasts
- 2 tbsp olive oil
- Salt and pepper to taste
- 2 tbsp butter
- 8 oz mushrooms, sliced
- 2 cloves garlic, minced
- 1 cup heavy cream
- ½ cup chicken broth
- ½ cup grated Parmesan cheese
- 1 tsp Italian seasoning
- 8 oz pasta (any type)
- Fresh parsley (optional, for garnish)
Instructions
- Boil pasta in salted water according to package directions. Reserve 1 cup of pasta water before draining.
- Heat olive oil in a large skillet over medium-high heat. Season chicken with salt and pepper, then cook for 5-6 minutes per side until golden brown and cooked through. Remove, rest, and slice.
- In the same skillet, melt butter. Add mushrooms and sauté for 5-6 minutes until golden. Add garlic and cook for 1-2 minutes.
- Pour in chicken broth and let it simmer for 2-3 minutes. Add heavy cream, Parmesan cheese, and Italian seasoning. Simmer for 5 minutes, stirring until thickened.
- Add the cooked pasta and sliced chicken to the skillet. Toss to coat in the sauce, adding reserved pasta water if needed to reach desired sauce consistency.
- Garnish with parsley and extra Parmesan if desired.
Notes
For best results, slice the chicken thinly for even cooking. You can use a mix of mushrooms for more depth of flavor.
