Description

This creamy chicken mushroom pasta is a comforting dish perfect for weeknight dinners, combining easy-to-find ingredients for a rich flavor.


Ingredients

  • 2 medium-sized boneless, skinless chicken breasts
  • 2 tbsp olive oil
  • Salt and pepper to taste
  • 2 tbsp butter
  • 8 oz mushrooms, sliced
  • 2 cloves garlic, minced
  • 1 cup heavy cream
  • ½ cup chicken broth
  • ½ cup grated Parmesan cheese
  • 1 tsp Italian seasoning
  • 8 oz pasta (any type)
  • Fresh parsley (optional, for garnish)

Instructions

  1. Boil pasta in salted water according to package directions. Reserve 1 cup of pasta water before draining.
  2. Heat olive oil in a large skillet over medium-high heat. Season chicken with salt and pepper, then cook for 5-6 minutes per side until golden brown and cooked through. Remove, rest, and slice.
  3. In the same skillet, melt butter. Add mushrooms and sauté for 5-6 minutes until golden. Add garlic and cook for 1-2 minutes.
  4. Pour in chicken broth and let it simmer for 2-3 minutes. Add heavy cream, Parmesan cheese, and Italian seasoning. Simmer for 5 minutes, stirring until thickened.
  5. Add the cooked pasta and sliced chicken to the skillet. Toss to coat in the sauce, adding reserved pasta water if needed to reach desired sauce consistency.
  6. Garnish with parsley and extra Parmesan if desired.

Notes

For best results, slice the chicken thinly for even cooking. You can use a mix of mushrooms for more depth of flavor.
