Ingredients

  • 1.5 pounds Boneless, Skinless Chicken Breasts
  • 8 ounces Fresh Mushrooms (Cremini or button)
  • 1 cup Heavy Cream
  • 1 cup Low-Sodium Chicken Broth
  • 3 cloves Garlic (minced)
  • 1 medium Onion (finely chopped)
  • 2 tablespoons Olive Oil
  • to taste Salt and Pepper
  • to taste Fresh Parsley (chopped)

Instructions

  1. Rinse the chicken breasts, pat dry, and season with salt and pepper.
  2. Heat olive oil in a skillet over medium-high heat and sear the chicken for 5-7 minutes on each side until golden brown.
  3. Transfer the chicken to a plate and cover with foil to keep warm.
  4. In the same skillet, sauté chopped onion for 3-4 minutes until translucent.
  5. Add minced garlic and stir for 1 minute.
  6. Add sliced mushrooms and cook for 5-6 minutes until golden brown.
  7. Pour in chicken broth, deglaze the skillet, and simmer for 3-4 minutes.
  8. Reduce heat to low, add heavy cream, and simmer for 5 minutes.
  9. Return chicken to the skillet, spoon sauce over, and simmer for 3-4 minutes.
  10. Adjust seasoning with salt and pepper, garnish with parsley, and serve hot.

Notes

Serve hot over pasta, rice, or mashed potatoes. You can also add a side of steamed vegetables or a fresh salad.
