- 1.5 pounds Boneless, Skinless Chicken Breasts
- 8 ounces Fresh Mushrooms (Cremini or button)
- 1 cup Heavy Cream
- 1 cup Low-Sodium Chicken Broth
- 3 cloves Garlic (minced)
- 1 medium Onion (finely chopped)
- 2 tablespoons Olive Oil
- to taste Salt and Pepper
- to taste Fresh Parsley (chopped)
Instructions
- Rinse the chicken breasts, pat dry, and season with salt and pepper.
- Heat olive oil in a skillet over medium-high heat and sear the chicken for 5-7 minutes on each side until golden brown.
- Transfer the chicken to a plate and cover with foil to keep warm.
- In the same skillet, sauté chopped onion for 3-4 minutes until translucent.
- Add minced garlic and stir for 1 minute.
- Add sliced mushrooms and cook for 5-6 minutes until golden brown.
- Pour in chicken broth, deglaze the skillet, and simmer for 3-4 minutes.
- Reduce heat to low, add heavy cream, and simmer for 5 minutes.
- Return chicken to the skillet, spoon sauce over, and simmer for 3-4 minutes.
- Adjust seasoning with salt and pepper, garnish with parsley, and serve hot.
Notes
Serve hot over pasta, rice, or mashed potatoes. You can also add a side of steamed vegetables or a fresh salad.
