Description

A rich and velvety soup that combines tender chicken, fluffy gnocchi, and an array of vegetables in a creamy broth.


Ingredients

Scale
  • 1 tablespoon olive oil
  • 1 onion, diced
  • 2 carrots, diced
  • 2 stalks celery, diced
  • 2 cloves garlic, minced
  • 1 pound chicken breast, cut into bite-sized pieces
  • 4 cups chicken broth
  • 2 cups fresh spinach
  • 16 ounces gnocchi
  • 1 cup heavy cream
  • Salt and pepper to taste
  • Freshly grated Parmesan cheese for garnish
  • Chopped parsley for garnish

Instructions

  1. Heat olive oil in a Dutch oven over medium heat. Add onion, carrots, and celery; sauté until softened.
  2. Add garlic and sauté for an additional minute.
  3. Add chicken pieces and cook until browned.
  4. Pour in chicken broth and bring to a simmer.
  5. Add spinach and gnocchi; simmer until gnocchi float to the top and are tender.
  6. Stir in heavy cream and season with salt and pepper to taste.
  7. Serve hot, garnished with Parmesan cheese and chopped parsley.

Notes

For a lighter version, substitute half-and-half for heavy cream. This soup can be easily customized with seasonal vegetables.
