Ingredients

- 1 tablespoon olive oil
- 1 onion, diced
- 2 carrots, diced
- 2 stalks celery, diced
- 2 cloves garlic, minced
- 1 pound chicken breast, cut into bite-sized pieces
- 4 cups chicken broth
- 2 cups fresh spinach
- 16 ounces gnocchi
- 1 cup heavy cream
- Salt and pepper to taste
- Freshly grated Parmesan cheese for garnish
- Chopped parsley for garnish
Instructions
- Heat olive oil in a Dutch oven over medium heat. Add onion, carrots, and celery; sauté until softened.
- Add garlic and sauté for an additional minute.
- Add chicken pieces and cook until browned.
- Pour in chicken broth and bring to a simmer.
- Add spinach and gnocchi; simmer until gnocchi float to the top and are tender.
- Stir in heavy cream and season with salt and pepper to taste.
- Serve hot, garnished with Parmesan cheese and chopped parsley.
Notes
For a lighter version, substitute half-and-half for heavy cream. This soup can be easily customized with seasonal vegetables.
