Description

A comforting and creamy soup made from cauliflower and carrots, perfect for chilly days. Packed with nutrients and easy to make, this soup is a warm hug in a bowl.


Ingredients

Scale
  • 1 head of cauliflower, chopped
  • 2 cups carrots, chopped
  • 1 onion, chopped
  • 2 cloves garlic, minced
  • 4 cups vegetable broth
  • Salt and pepper, to taste
  • Pinch of nutmeg (optional)
  • Olive oil, for drizzling
  • Yogurt or cream, for serving (optional)

Instructions

  1. In a pot, sauté onions and garlic until soft and fragrant.
  2. Add chopped carrots and cauliflower, followed by vegetable broth.
  3. Simmer until vegetables are tender.
  4. Blend the mixture until smooth and creamy.
  5. Adjust seasoning as needed and serve hot, topped with olive oil or yogurt.

Notes

For a thicker soup, add a peeled potato while cooking. Can substitute coconut milk for a dairy-free version.
