Ingredients

- 2 tablespoons olive oil
- 1 medium onion, diced
- 2 cloves garlic, minced
- 1 teaspoon ground cumin
- 1 teaspoon ground coriander
- 4 medium carrots, diced
- 1 cup dried lentils (brown or green)
- 4 cups vegetable broth
- Salt and pepper to taste
- Fresh herbs (basil or parsley) for garnish
Instructions
- Heat olive oil in a pot over medium heat. Add diced onions and minced garlic, sautéing until fragrant.
- Add ground cumin and coriander, stirring for 1 minute.
- Add diced carrots and lentils, then pour in the vegetable broth. Bring to a boil.
- Reduce heat, cover, and let simmer until lentils are tender, about 30 minutes.
- Blend part of the soup for a creamy texture, then stir it back in.
- Season with salt and pepper to taste, garnish with fresh herbs, and serve hot.
Notes
For added nutrition, stir in greens during the last few minutes of cooking. Adjust spices according to your preference.
