- 1 cup sweet corn
- 2 tablespoons butter
- 1/4 cup fresh cilantro, chopped
- 1 lime, juiced
- 2 cloves garlic, minced
- 1 teaspoon chili powder
- 1/2 cup cotija cheese, crumbled
- Salt and pepper to taste
Instructions
- Marinate chicken breasts in lime juice, garlic, and spices.
- Grill chicken for about 25 minutes until cooked through.
- Sauté sweet corn in butter with cilantro and spices until heated.
- Combine cooked chicken and corn mixture, adding crumbled cheese.
- Serve with lime juice and additional cilantro.
Notes
Optionally marinate chicken for up to 2 hours for more flavor. For a spicier version, add jalapeños.
