Description

A vibrant dish combining grilled chicken with a creamy sweet corn mixture, inspired by Mexican street corn.


Ingredients

  • 4 boneless, skinless chicken breasts
  • 1 cup sweet corn
  • 2 tablespoons butter
  • 1/4 cup fresh cilantro, chopped
  • 1 lime, juiced
  • 2 cloves garlic, minced
  • 1 teaspoon chili powder
  • 1/2 cup cotija cheese, crumbled
  • Salt and pepper to taste

Instructions

  1. Marinate chicken breasts in lime juice, garlic, and spices.
  2. Grill chicken for about 25 minutes until cooked through.
  3. Sauté sweet corn in butter with cilantro and spices until heated.
  4. Combine cooked chicken and corn mixture, adding crumbled cheese.
  5. Serve with lime juice and additional cilantro.

Notes

Optionally marinate chicken for up to 2 hours for more flavor. For a spicier version, add jalapeños.
