Description

Delicious no-bake truffles that combine the sweetness of white chocolate with tangy cranberries and crunchy pistachios.


Ingredients

Scale
  • 8 oz white chocolate, chopped
  • 1 cup dried cranberries, finely chopped
  • 1 cup pistachios, crushed (plus extra for rolling)
  • 1 tsp vanilla extract (optional)

Instructions

  1. In a double boiler, melt the white chocolate until smooth.
  2. Remove from heat and stir in the chopped cranberries and crushed pistachios until well combined.
  3. Allow the mixture to cool in the refrigerator until firm.
  4. Once set, scoop out portions and roll them into balls.
  5. Roll each truffle in additional crushed pistachios to coat.
  6. Serve immediately or store in an airtight container in the refrigerator.

Notes

For a nut-free option, substitute pistachios with sunflower seeds. For a dairy-free version, use dairy-free white chocolate.
