Description
Delicious no-bake truffles that combine the sweetness of white chocolate with tangy cranberries and crunchy pistachios.
Ingredients

- 8 oz white chocolate, chopped
- 1 cup dried cranberries, finely chopped
- 1 cup pistachios, crushed (plus extra for rolling)
- 1 tsp vanilla extract (optional)
Instructions
- In a double boiler, melt the white chocolate until smooth.
- Remove from heat and stir in the chopped cranberries and crushed pistachios until well combined.
- Allow the mixture to cool in the refrigerator until firm.
- Once set, scoop out portions and roll them into balls.
- Roll each truffle in additional crushed pistachios to coat.
- Serve immediately or store in an airtight container in the refrigerator.
Notes
For a nut-free option, substitute pistachios with sunflower seeds. For a dairy-free version, use dairy-free white chocolate.
