- 8 oz Full-Fat Cream Cheese
- 1 cup Mature/Sharp Cheddar Cheese, grated
- 1 cup Dried Cranberries
- 1 cup Pecans
- 1 tablespoon Chives
- 1/2 cup Reserved Pecans Mixture
Instructions
- Chop the dried cranberries and chives finely. Chop half of the pecans for mixing and reserve the other half for coating.
- In a large bowl, mix the cream cheese and grated cheddar cheese together until smooth.
- Stir in the chopped cranberries, chopped pecans, and chives. Mix well until all the ingredients are fully combined.
- Lay a piece of plastic wrap on the counter. Spoon the mixture into the center and form it into a log shape. Wrap it tightly in the plastic wrap.
- Chill the cheese log in the refrigerator for at least one hour to firm up.
- Remove the log from the plastic wrap and roll it in the reserved pecan mixture to coat the outside evenly.
Notes
Serve chilled or at room temperature with crackers, sliced baguette, or fresh veggies. Can be made ahead of time and stored.
