  • 2 medium oranges (juiced and zested)
  • 3/4 cup granulated sugar
  • 3 large eggs
  • 1/2 cup unsalted butter (melted)
  • 1 pre-made tart shell

Instructions

  1. Preheat the oven to 350°F (175°C). Place the tart shell on a baking sheet.
  2. In a saucepan, combine cranberries, sugar, and orange juice. Cook over medium heat until the cranberries burst and the sauce thickens, about 10 minutes.
  3. In a bowl, whisk the eggs and orange zest together. Gradually mix in the cooled cranberry mixture.
  4. Pour the curd mixture into the tart shell. Bake for 30-35 minutes, until set but slightly jiggly in the center.
  5. Cool at room temperature, then refrigerate for at least 2 hours before serving.

Notes

Cool the cranberry mixture completely before adding it to the eggs to avoid cooking the eggs. For extra flavor, add a pinch of cinnamon or ginger while cooking. Adjust sugar to taste for a sweeter tart.
