Ingredients

  • 1 cup breadcrumbs
  • 1/2 cup cranberry sauce
  • Zest of 1 orange
  • 1/4 cup fresh parsley, chopped
  • 1/4 cup fresh thyme, chopped

  • 1/2 teaspoon black pepper

Instructions

  1. Preheat your oven to 400°F (200°C).
  2. In a bowl, combine ground chicken, breadcrumbs, cranberry sauce, orange zest, herbs, garlic, salt, and pepper.
  3. Mix until just combined, being careful not to overwork the meat.
  4. Form the mixture into small balls and place them on a baking sheet lined with parchment paper.
  5. Bake for 20 minutes, or until the internal temperature reaches 165°F (74°C).
