Description

Ingredients

  • 2 cups all-purpose flour
  • 1 cup fresh cranberries, chopped
  • 1 cup sugar
  • 1/2 cup butter, melted
  • 2 large eggs
  • 1/2 cup milk
  • 1 teaspoon baking powder
  • 1/2 teaspoon salt
  • 1 tablespoon orange zest
  • 1/2 cup orange juice

Instructions

  1. Preheat the oven to 350°F (175°C) and grease a loaf pan.
  2. In a large bowl, mix the flour, sugar, baking powder, and salt.
  3. In another bowl, combine the melted butter, eggs, milk, orange juice, and zest.
  4. Gently fold the wet ingredients into the dry ingredients until just combined, avoiding overmixing.
  5. Fold in the chopped cranberries.
  6. Pour the batter into the prepared loaf pan and spread evenly.
  7. Bake for 60 minutes or until a toothpick inserted in the center comes out clean.
  8. Allow the bread to cool in the pan for 10 minutes, then transfer to a wire rack to cool completely.

Notes

For a dairy-free option, use almond milk instead of regular milk and coconut oil in place of butter.
