Ingredients

  • 1 can whole kernel corn (15 oz)
  • 1 can cream-style corn (15 oz)
  • 1 box Jiffy corn muffin mix (8.5 oz)
  • 1 cup sour cream
  • 1 cup shredded sharp cheddar cheese
  • 2 large eggs
  • 1/2 cup unsalted butter, melted

Instructions

  1. Preheat your oven to 350°F (175°C) and grease a 9×13-inch baking dish.
  2. In a large bowl, combine the whole kernel corn, cream-style corn, Jiffy muffin mix, sour cream, shredded cheese, eggs, and melted butter. Mix until just combined.
  3. Pour the mixture into the prepared baking dish and spread it evenly.
  4. Bake for 45-50 minutes until the top is golden brown and a toothpick inserted in the center comes out clean.
  5. Allow to cool for 5 minutes before serving.

Notes

For extra flavor, add chopped jalapeños or diced bell peppers. You can also use different types of cheese to change the taste.
