- 1 (2–3 lb) butternut squash
- 1 head garlic
- 1–1½ cups ricotta cheese
- ½ cup grated Parmesan cheese
- 6–8 roasted garlic cloves
- Salt to taste
- Pepper to taste
- 1 beaten egg
- 8–10 lasagna noodles
- 1 cup marinara sauce
- 1 cup shredded mozzarella cheese
Instructions
- Preheat the oven to 400°F (200°C).
- Halve the butternut squash, remove seeds, and roast cut-side down for 30–40 minutes until tender alongside the garlic.
- In a bowl, scoop out the squash flesh, add ricotta, Parmesan, roasted garlic, salt, pepper, and beaten egg; blend until smooth.
- Cook lasagna noodles until firm-tender, drain, and cool.
- Spread ~¼–⅓ cup filling on each noodle, roll tightly, and place seam-side down in a greased 9×13 pan over marinara.
- Top with mozzarella, cover with foil, and bake at 375°F (190°C) for 20–25 minutes.
- Uncover and bake for an additional 8–10 minutes until bubbly and golden.
Notes
Tips: Dry noodles on a towel after cooking; adjust filling consistency with milk or breadcrumbs as needed.
