Delicious twice-baked sweet potatoes filled with a savory mixture of sweet potatoes, tart cranberries, and crisp apples, perfect for fall.

  • 4 medium sweet potatoes
  • 1 cup fresh cranberries
  • 2 apples, diced
  • 2 tablespoons butter
  • 1 teaspoon cinnamon

Instructions

  1. Bake the sweet potatoes whole in a preheated oven at 400°F (200°C) for about 45-60 minutes, until tender.
  2. Allow sweet potatoes to cool, then scoop out the insides and place in a bowl.
  3. In a skillet, melt butter and sauté the diced apples until slightly caramelized.
  4. Add cranberries, cinnamon, salt, and pepper, mixing well.
  5. Combine the apple-cranberry mixture with the scooped sweet potato insides.
  6. Scoop the mixture back into the sweet potato skins.
  7. Return to the oven for an additional 15-20 minutes until heated through and slightly golden on top.
