- 4 medium sweet potatoes
- 1 cup fresh cranberries
- 2 apples, diced
- 2 tablespoons butter
- 1 teaspoon cinnamon
- Salt to taste
- Pepper to taste
Instructions
- Bake the sweet potatoes whole in a preheated oven at 400°F (200°C) for about 45-60 minutes, until tender.
- Allow sweet potatoes to cool, then scoop out the insides and place in a bowl.
- In a skillet, melt butter and sauté the diced apples until slightly caramelized.
- Add cranberries, cinnamon, salt, and pepper, mixing well.
- Combine the apple-cranberry mixture with the scooped sweet potato insides.
- Scoop the mixture back into the sweet potato skins.
- Return to the oven for an additional 15-20 minutes until heated through and slightly golden on top.
