- 1.5–2 pounds ground beef
- 1 medium onion, diced
- 2 cloves garlic, minced
- 1 cup frozen corn, thawed
- 1 cup canned black beans, rinsed and drained
- 1 (10.5 oz) can cream of mushroom or cream of chicken soup
- 1/2 cup sour cream
- 1/2 cup milk
- 1 tablespoon Worcestershire sauce
- 1 teaspoon chili powder
- 1/2 teaspoon smoked paprika
- Salt and pepper to taste
- 2 cups shredded sharp cheddar cheese
- 32 oz frozen tater tots
Instructions
- Preheat the oven to 375°F and prepare a 9×13-inch baking dish.
- Brown the ground beef with the onion and garlic over medium-high heat for 6–8 minutes; drain excess fat.
- Add the corn, beans, soup, sour cream, milk, Worcestershire sauce, chili powder, smoked paprika, salt and pepper to the beef mixture; mix well.
- Transfer the meat mixture to the prepared dish.
- Sprinkle the cheddar cheese evenly over the top.
- Arrange the tater tots in a single layer on top of the cheese.
- Bake uncovered for 25–30 minutes until bubbly and golden; broil for 1–2 minutes for extra browning if desired.
- Let rest for 5–10 minutes before serving to set.
Notes
Par-bake tater tots for extra crispiness. Drain well to avoid a watery casserole. Use a good melting cheese for best texture.
