Description

A comforting casserole with seasoned beef, melty cheddar, and crispy tater tots, perfect for weeknight dinners and potlucks.


Ingredients

  • 1.52 pounds ground beef
  • 1 medium onion, diced
  • 2 cloves garlic, minced
  • 1 cup frozen corn, thawed
  • 1 cup canned black beans, rinsed and drained
  • 1 (10.5 oz) can cream of mushroom or cream of chicken soup
  • 1/2 cup sour cream
  • 1/2 cup milk
  • 1 tablespoon Worcestershire sauce
  • 1 teaspoon chili powder
  • 1/2 teaspoon smoked paprika
  • Salt and pepper to taste
  • 2 cups shredded sharp cheddar cheese
  • 32 oz frozen tater tots

Instructions

  1. Preheat the oven to 375°F and prepare a 9×13-inch baking dish.
  2. Brown the ground beef with the onion and garlic over medium-high heat for 6–8 minutes; drain excess fat.
  3. Add the corn, beans, soup, sour cream, milk, Worcestershire sauce, chili powder, smoked paprika, salt and pepper to the beef mixture; mix well.
  4. Transfer the meat mixture to the prepared dish.
  5. Sprinkle the cheddar cheese evenly over the top.
  6. Arrange the tater tots in a single layer on top of the cheese.
  7. Bake uncovered for 25–30 minutes until bubbly and golden; broil for 1–2 minutes for extra browning if desired.
  8. Let rest for 5–10 minutes before serving to set.

Notes

Par-bake tater tots for extra crispiness. Drain well to avoid a watery casserole. Use a good melting cheese for best texture.
