Description

A creamy and flavorful twist on traditional queso dip, made healthier with cottage cheese. Perfect for dipping chips or spreading on tacos.


Ingredients

  • 1 cup cottage cheese (well drained)
  • 1/2 tsp garlic powder
  • 1/2 tsp smoked paprika
  • 1 small jalapeño, finely chopped (optional)
  • 2 tbsp fresh cilantro, chopped
  • 1 tbsp fresh lime juice
  • Salt and pepper, to taste

Instructions

  1. Drain any excess liquid from the cottage cheese for a thick, creamy consistency.
  2. Finely chop cilantro and jalapeño (if using) to release their flavors.
  3. Place cottage cheese in a blender or food processor and pulse until smooth with some texture.
  4. Stir in garlic powder, smoked paprika, lime juice, salt, and pepper; mix well.
  5. Fold in chopped cilantro and jalapeño, adjusting seasoning as needed.
  6. Refrigerate for at least 30 minutes to meld flavors and firm up.

Notes

For a spicy kick, add diced tomatoes or hot sauce. Adjust the jalapeño based on your spice preference.
