Ingredients

  • 1 cup all-purpose flour
  • 2 tsp baking powder
  • 1/2 tsp salt
  • 2 large eggs
  • 3 tbsp melted butter

Instructions

  1. Preheat your oven to 375°F (190°C) and line a baking sheet with parchment paper.
  2. In a large bowl, whisk together the flour, baking powder, and salt.
  3. In another bowl, mix the cottage cheese, eggs, and melted butter until well combined.
  4. Pour the wet mixture into the dry ingredients and stir gently until just combined; do not overmix.
  5. Using a spoon or ice cream scoop, drop dollops of batter onto the prepared baking sheet, leaving space between each.
  6. Bake for 20-25 minutes or until golden brown. Let cool slightly before serving warm with butter or jam.
