- 1 cup cottage cheese (full-fat)
- 1 cup all-purpose flour
- 2 tsp baking powder
- 1/2 tsp salt
- 2 large eggs
- 3 tbsp melted butter
Instructions
- Preheat your oven to 375°F (190°C) and line a baking sheet with parchment paper.
- In a large bowl, whisk together the flour, baking powder, and salt.
- In another bowl, mix the cottage cheese, eggs, and melted butter until well combined.
- Pour the wet mixture into the dry ingredients and stir gently until just combined; do not overmix.
- Using a spoon or ice cream scoop, drop dollops of batter onto the prepared baking sheet, leaving space between each.
- Bake for 20-25 minutes or until golden brown. Let cool slightly before serving warm with butter or jam.
