- 2 celery stalks, diced
- 2 cloves garlic, minced
- 4 medium potatoes, diced
- 1 can beans (cannellini or kidney), drained and rinsed
- 6 cups broth (vegetable, chicken, or beef)
- 4 cups kale, chopped
- Salt and pepper to taste
- Grated Parmesan cheese for serving (optional)
Instructions
- In a large pot, brown the sausage until cooked through and golden.
- Add the diced onions, carrots, and celery, cooking until softened.
- Stir in the minced garlic and cook for an additional minute.
- Add the diced potatoes, beans, broth, and chopped kale to the pot.
- Let the soup simmer until the potatoes are tender, about 30-45 minutes.
- Season with salt and pepper to taste before serving.
- Serve topped with grated Parmesan cheese if desired.
Notes
For a dairy-free version, omit cheese and use plant-based sausage. Adjust spices to taste for your preference.
