Ingredients

- 2 cups sliced onions
- 2 cups cooked orzo pasta
- 2 cups cooked chicken, shredded
- 2 cups low-sodium chicken broth
- 1 cup shredded Gruyère cheese
- 1 cup shredded mozzarella cheese
- 2 tablespoons olive oil
- 1 teaspoon garlic powder
- 1 teaspoon dried thyme
- Salt and pepper to taste
Instructions
- Preheat oven to 350°F (175°C).
- In a large skillet, heat olive oil over medium-low heat and sauté onions for 15-20 minutes until golden brown.
- Stir in chicken, cooked orzo, chicken broth, garlic powder, thyme, salt, and pepper.
- Transfer mixture to a greased baking dish and sprinkle with Gruyère and mozzarella cheese on top.
- Bake for 30-35 minutes until bubbly and golden.
Notes
For best results, allow leftovers to sit overnight for flavors to meld. Can be frozen for up to 3 months.
