Ingredients

  • 2 cups Broccoli, fresh or frozen, steamed
  • 2 cups Sharp Cheddar Cheese, freshly shredded
  • 1 can (10.5 oz) Cream of Mushroom Soup (or substitute cream of chicken)
  • 1 sleeve Ritz Crackers, crushed
  • 1/4 cup Butter, melted

Instructions

  1. Preheat the oven to 350°F (175°C).
  2. Steam the broccoli until bright green, but do not overcook.
  3. In a large bowl, mix together the steamed broccoli, shredded cheddar cheese, and cream of mushroom soup until well combined.
  4. Transfer the mixture to a baking dish.
  5. In a separate bowl, combine the crushed Ritz crackers with melted butter.
  6. Sprinkle the cracker mixture evenly over the broccoli mixture.
  7. Bake in the preheated oven for 25-30 minutes or until the topping is golden and crispy.
  8. Let it cool for a few minutes before serving.

Notes

This casserole tastes even better the next day. Assemble a day ahead and add crackers right before baking to keep them crispy.
