Ingredients

  • 1 lb ground beef
  • 1 medium onion, diced
  • 2 cups frozen shredded hashbrowns, thawed and drained
  • 2 cups sharp cheddar cheese, shredded
  • 1 cup Mexican cheese blend, shredded
  • 1 cup sour cream
  • 2 tablespoons taco seasoning
  • Salt and pepper to taste

Instructions

  1. Preheat the oven to 375°F (190°C).
  2. In a skillet, brown the ground beef with diced onion and taco seasoning until fully cooked. Drain excess fat.
  3. In a bowl, mix the cooked beef with sour cream and half the sharp cheddar cheese.
  4. In a baking dish, layer half of the hashbrowns, followed by the beef mixture, and then the rest of the hashbrowns.
  5. Top with remaining cheese and cover with foil.
  6. Bake for 30 minutes, then remove the foil and bake for an additional 15 minutes, until golden and bubbly.
  7. Let it rest for 10 minutes before serving.
