Ingredients

  • 1 ½ cups all-purpose flour
  • 1 cup sugar
  • 2 teaspoons baking powder
  • ½ teaspoon baking soda
  • ½ teaspoon salt
  • 2 large eggs
  • ½ cup unsalted butter, melted
  • ½ cup brewed strong coffee, cooled
  • 1 teaspoon vanilla extract
  • 1 cup walnuts, chopped
  • ¼ cup milk

Instructions

  1. Preheat your oven to 350°F (175°C). Grease a loaf pan and set it aside.
  2. In a large bowl, mix together the flour, sugar, baking powder, baking soda, and salt.
  3. In another bowl, whisk the eggs, melted butter, cooled coffee, vanilla extract, and milk until well combined.
  4. Gradually add the wet ingredients to the dry ingredients. Stir until just combined.
  5. Fold in the chopped walnuts.
  6. Pour the batter into the prepared loaf pan and smooth the top.
  7. Bake for about 50-60 minutes or until a toothpick inserted in the center comes out clean.
  8. Let the loaf cool in the pan for about 10 minutes, then remove it from the pan and place it on a wire rack to cool completely.

Notes

For stronger coffee flavor, use a dark roast. Wrap in plastic wrap for storage. Can freeze for up to three months.
