- 1 ½ cups all-purpose flour
- 1 cup sugar
- 2 teaspoons baking powder
- ½ teaspoon baking soda
- ½ teaspoon salt
- 2 large eggs
- ½ cup unsalted butter, melted
- ½ cup brewed strong coffee, cooled
- 1 teaspoon vanilla extract
- 1 cup walnuts, chopped
- ¼ cup milk
Instructions
- Preheat your oven to 350°F (175°C). Grease a loaf pan and set it aside.
- In a large bowl, mix together the flour, sugar, baking powder, baking soda, and salt.
- In another bowl, whisk the eggs, melted butter, cooled coffee, vanilla extract, and milk until well combined.
- Gradually add the wet ingredients to the dry ingredients. Stir until just combined.
- Fold in the chopped walnuts.
- Pour the batter into the prepared loaf pan and smooth the top.
- Bake for about 50-60 minutes or until a toothpick inserted in the center comes out clean.
- Let the loaf cool in the pan for about 10 minutes, then remove it from the pan and place it on a wire rack to cool completely.
Notes
For stronger coffee flavor, use a dark roast. Wrap in plastic wrap for storage. Can freeze for up to three months.
