- 2 cups Fresh Strawberries
- 1 cup Coconut Cream
- 2–3 tablespoons Powdered Sugar
- 1 teaspoon Vanilla Bean Paste
- Fresh Mint Leaves (optional, for garnish)
Instructions
- Prepare the strawberries by rinsing them under cold water, patting them dry, removing the green tops, and slicing them in half or quarters. Place in a medium bowl.
- Sprinkle powdered sugar over the strawberries and toss gently. Let them macerate for 15-20 minutes.
- Scoop the thick coconut cream into a mixing bowl and whip using an electric mixer until fluffy.
- Gradually add powdered sugar and vanilla bean paste while whipping until soft peaks form.
- Arrange the macerated strawberries in serving dishes and spoon the coconut whipped cream over them.
- Garnish with fresh mint leaves and serve immediately.
Notes
For the best results, chill the mixing bowl and beaters before whipping the coconut cream. Taste as you go to adjust sweetness.
