Delightful Coconut Butter Bars combining rich flavors of coconut and butter, perfect for snacks or desserts.

Ingredients

  • 1 cup all-purpose flour
  • 1/2 cup unsweetened shredded coconut
  • 1/2 cup butter, softened
  • 1/4 cup granulated sugar
  • 1/4 teaspoon salt
  • 1 can (14 oz) sweetened condensed milk
  • 1/2 cup shredded coconut for topping
  • 1 teaspoon vanilla extract

Instructions

  1. Preheat the oven to 350°F (175°C). Grease a baking dish.
  2. In a mixing bowl, combine flour, shredded coconut, butter, sugar, and salt. Press the mixture into the bottom of the prepared dish to form a crust.
  3. Bake the crust for 15 minutes.
  4. In another bowl, mix sweetened condensed milk, vanilla extract, and shredded coconut. Pour this mixture over the baked crust.
  5. Bake for an additional 20 minutes, or until set and golden on top.
  6. Let it cool, then cut into bars and serve.

Notes

Store in an airtight container for up to 4-5 days at room temperature, or refrigerate for up to two weeks. For longer storage, freeze for up to three months.
